One of the oldest and most popular varieties in the world. Extraordinary Macedonia terroir and rare combination of micro climates gives special character to this international variety. Wines out of Cabernet Sauvignon are famous for its dominant tannin, having excellent aging potential.

Geographical Origin, Soil and Climate

The vineyards of HEPOK partners, planted and nourished on fertile macedonian soil, are one of the best in the region. The region is very well known for excellent red wines, even since the Greek times.
Excellent macedonian terroir formed by a triangle made out of two seas and a continent, numerous fertile river valleys, together with extraordinary climate, creates unique conditions for excellent red wines.

Production

The grapes are collected by hand and cooled in the vineyard, immediately after picking and transported cooled to HEPOK wine cellar. Minimum of 10 days of temperature controlled fermentation in stainless steel fermenters, constant analyses and regular hygienic controls are the up to date standards we apply, but the key secrets for extraordinary wines hides within the great tradition and knowledge only HEPOK winemakers have.

Description

Dark Ruby colour, rich fruit flavor, strong tannin structure, very dense wine with extra long after taste. Even as a young wine it has a perfect taste but in order to allow him to show its full potential you should give him a few years. Excellent for your private wine cellar.

- Best if served at 16°C
- Best to serve with strong meals: red meat, cheese, smoked ham (pršut)
- best taste can be achieved if decanted

CS is a excellent wine, having average alcohol percentage (12-13%), strong and fresh, flourish trough its Macedonian character
